Poor Tom’s Sydney Dry Gin
The original, Sydney Dry Gin is unlike any other. It steep 10 botanicals in Australian wheat spirit, which is then distilled in their little German copper still.
According to the Poor Toms team, they used Granny Smith apples in place of citrus which can overpower many soft botanical notes, but also added lemon myrtle and chamomile to boost and bring out the apple notes.
Strawberry gum is a gum leaf with the aroma of strawberry and it takes the gin to a floral, fresh, fruity delicate flavour profile which is unlike London dry gins which are usually spicy and citrusy.
The final product is a dry, wheat-based gin flavoured with indigenous botanicals including strawberry gum (leaves) and lemon myrtle with chamomile and Granny Smith apple.
